Make sure you know what you are looking at by double checking which layer is on top in the layers box below the map.
Kinda confused about your farm and field statements. Do you have one farm with three fields? Or do you have three farms, each with a field?

Create your Fields in the tree under the correct Farm. Right click on Farm - select New Field
Right click on the field and select edit boundary then your drawing tools will come up for editing. Save and Close when done for each field.

Same goes for crop enterprises; right click on field and select add enterprise; then right click on enterprise and select edit boundaries if different than the original field boundary.

If you give the newer fields a different name than the original name, the old data will remain with the original field and enterprises. They can be retired at a later time if you no longer need to look at them.
