If these fields with separate owners are cash rent, then placing all tracts into one field is fine. The problem would be if they are share crop fields. Share crop fields would have separate field records and FSA reportings, so even though farmed as one field, would still want the records separate. Yes you can have multiple polygon maps in one field, they each need to be imported or manually draw to the same field.
