Patrick,
Do you want the history to follow along with the fields also? If so, just create a new client of yourself, right click on the farm you want to move, select properties and change the client association box to your new client name. You should get a drop down list from which to choose the appropriate client. All fields under this farm will move along with this change also.
Fields can also be moved in this similiar manner, the only difference being that you will have a client and a farm association box with which to make changes.
